Chekov, the Vodka-drinker, and Scotty, the Scotch-drinker, in "The Trouble with Tribbles."
"I thought you said you'd like him if he mellowed a little."
"I never said that!"
Edit: Kirk and McCoy in "This Side of Paradise" regarding Spock's flippant attitude during Kirk's communicator conversation. McCoy saying "That didn't sound at all like Spock, Jim!" threw Kirk for a loop, so he responded accordingly.
Another easier one:
"Leave medicine to medical men, Captain!"
Which episode and which "Captain" was addressed?

I guess not, DJ!
It was "The Omega Glory," and McCoy was talking to Capt. Ronald Tracy.
How about this exchange of dialog:
"You're bluffing!"
"Vulcans never bluff."
"No....I don't suppose that they do!"
Which episode and who accused our favorite Vulcan of bluffing?

Kang, the noblest Klingon of them all IMHO, in "Day of the Dove."
"Does your logic find this fascinating, Mr. Spock?"
"No, Doctor. Fascinating is a word I use to describe the unexpected. In this case I believe interesting would suffice."
Name the episode and what Bones and Spock are talking about that's so "interesting?"

"The Squire of Gothos", and they're talking about Trelane's food.
Next challenge:
"I'll protect you, fair maiden!" "Sorry, neither."

It was first said by Scotty to Tomar the Kelvan in "By Any Other Name."
It was repeated by Data to Scotty in "Relics."
I thought it added a charming touch of nostalgia to the scene.
I'll take a page from your book, UT.
"There's a stain on your shining armor, Captain!"
Episode and character.

Took me a while to figure that one out, Elric. It's Leonore Karidian to Kirk in "The Conscience of the King".
Let's see how hard this one is...
"Terror must be maintained or the Empire is doomed."
